A bowl of fish soup in Singapore is built from three choices. The fish: sliced (poached, clean and sweet), fried (battered chunks, richer) or mixed. The broth: clear, or milky with a splash of evaporated milk for a creamier body. And the carb: thick or thin bee hoon, other noodles, or rice on the side. The fish is most often batang (Spanish mackerel). A Seth Lui round-up updated in September 2026 found most hawker bowls at $5 to $7, with premium stalls higher, and some stalls charge a small extra for milk.
It is the bowl Singaporeans reach for when they want something light, warm and kind to the stomach. Here is how to order it your way.

The milk question
Milk in fish soup surprises visitors, but it is common here. Stalls add evaporated milk, which Seth Lui describes as giving “a creamier texture and a slightly richer body”. It pairs naturally with fried fish and thick bee hoon; purists prefer clear broth with sliced fish so the stock can speak. Some stalls make milky soup their default, others add milk only if you ask, and some do not offer it at all.
Will milk cost extra? Sometimes. In January 2023, Mustsharenews reported a VivoCity food-court stall charging $0.50 for milk on a $6.50 bowl, citing the rising cost of evaporated milk; another hawker said he kept milk free. Ask before you order if the board is unclear. If you are avoiding dairy, say “no milk” clearly, as some broths are milky by default.

Where two or three prices appear, they are bowl sizes. Upgrading the fish (to grouper or pomfret) or adding prawns raises the price.
How to order
- Fish: “sliced”, “fried” or “mixed”.
- Carb: “thick bee hoon”, “thin bee hoon”, “yi mian” or “rice”.
- Broth: “clear” or “with milk”.
- Size: say the price, e.g. “$7”.
- Extras: more fish, an egg, or less vegetable, if the stall allows.
Worked example
At Cai Ji’s listed prices, a large mixed ($7.50) and a small sliced ($5) for two comes to $12.50, or $6.25 each. If a stall charged $0.50 for milk on one bowl, the total would be $13.
The WahLiao Verdict
For your first bowl, order sliced fish, clear soup, thick bee hoon to taste the stock, then come back for fried fish with milk when you want comfort. Ask about milk charges before you pay, mention any dairy allergy plainly, and take the chilli-soy dip: it brings the whole bowl alive.

What fish is batang?
Batang is the local name for Spanish mackerel, a firm, mild fish that holds together when sliced and poached.
Is fish soup healthy?
Sliced fish in clear soup is one of the lighter hawker options. Fried fish and milk add fat and calories; the soup can also be salty, so you need not finish it all.
Why does my soup taste of wine?
Some stalls add a dash of Chinese cooking wine (Shaoxing or huadiao). Ask for none if you prefer.
Fish soup or fish porridge?
Same fish, different base. Many fish soup stalls also sell porridge; just ask for “porridge” instead of noodles.
